Nomad Eatery Brings Flavor and Family to Downtown Daybreak

Downtown Daybreak is set to welcome a new and exciting addition to its dining scene: Nomad Eatery! This restaurant is built on a foundation of creativity, community, and a commitment to using local, fresh ingredients. Nomad has garnered a loyal following throughout Utah. It is a family-run establishment led by owner Holly Cloyd, her son and chef Jonah Foutz, and chef/owner Vance Lott. Each of them brings their own passion and unique culinary journey to the dining experience.

Nomad Owners

Holly Cloyd pursued her dream of cooking by moving from Utah to New York, where she attended the French Culinary Institute after gaining experience at Communal in Provo. Upon her return to Utah, she co-founded Nomad Eatery in Salt Lake City and later launched Nomad East alongside Jonah and Vance. Now, with a new location opening in Daybreak, Holly continues her mission to create inviting spaces where people can connect over memorable meals.

Chef Jonah Foutz’s culinary journey began in his family kitchen in New Mexico and led him to work in some of Chicago’s finest restaurants, including the renowned Michelin-starred establishment, Elske. His return to Salt Lake City to help establish Nomad East represents a homecoming in more ways than one, allowing him to bring his experience and passion back to a community he loves. Vance Lott, a native of Utah County and a graduate of UVU’s culinary program, complements the leadership team. With experience at beloved local restaurants such as Tupelo and Avenues Proper, Vance contributes a thoughtful and grounded approach to Nomad’s creative cuisine.
